This tasty side dish takes 20 minutes to prepare and just 6 to cook. It serves 8. Here's what you'll need:

  • 15 ml (1 tbsp) low-sodium soy sauce
  • 15 ml (1 tbsp) oyster sauce
  • 30 ml (2 tbsp) freshly squeezed lime juice
  • 15 ml (1 tbsp) sugar
  • 30 ml (2 tbsp) canola oil
  • 4 cloves garlic, minced
  • 2 serrano or jalapeño peppers, seeded and thinly sliced diagonally
  • 3 scallions, thinly sliced
  • 1 medium red pepper, seeded and cut into small pieces
  • 110 g (4 oz) snow peas
  • 1 long Japanese eggplant, cut into small cubes
  • 110 g (4 oz) mushrooms, stems removed and caps cut into wedges
  • 15 ml (1 tbsp) peeled and finely chopped fresh ginger
  • 3 small heads baby bok choy, cored and thinly sliced
  • 125 ml (1⁄2 cup) loosely packed basil leaves, cut into thin shreds

Put it all together

  1. Combine the soy sauce, oyster sauce, lime juice, and sugar in a small bowl.
  2. Heat the oil in a large non-stick frying pan over medium-high heat. Add the garlic and chili peppers and stir-fry for 30 seconds. Add the scallion, red pepper, snow peas, eggplant, mushroom, and ginger and stir-fry for 2 minutes. Add the bok choy and stir-fry until wilted (about 1 minute). Add the soy mixture. Stir-fry until all of the vegetables are crisp and tender (about 1 minute). Stir in the basil and serve immediately.
